Professional Cookery Advanced Apprenticeship Level 3

Apprenticeships are very popular programmes designed by employers that provide paid work-experience, training and qualifications to people aged 16 and above.
An Apprenticeship framework comprises:
- A work-based qualification (NVQ), assessed in the workplace, demonstrating practical skills linked to the job
- A technical certificate, achieved at College, showing the theoretical knowledge relevant to the job
and other qualifications valued by employers such as:
- Functional skills, which show competency in English, maths or I.C.T applied to the workplace
- Employee Rights and Responsibilities (ERR)
- Personal Learning and Thinking Skills (PLTS); they include creative thinking, independent enquiry, reflective learner, effective participator, self management and team working.

Qualification
In the workplace, candidates will cover the following units:
Establish and develop positive working relationships in hospitality
Maintain the health, hygiene, safety and security of the working environment
Maintain food safety when storing, preparing and cooking food
Prepare fish for complex dishes
Prepare meat for complex dishes
Prepare poultry for complex dishes
Cook and finish complex fish dishes
Cook and finish complex meat dishes
Cook and finish complex poultry dishes
Cook and finish complex vegetable dishes
Prepare, cook and finish complex hot sauces
Prepare, cook and finish dressings and cold sauces
There will be optional units to choose from.
At College, candidates will study the Level 3 Certificate in Hospitality and Catering Principles and Functional Skills in maths and English at Level 2.
Assessments will be based on performance in the workplace, assignments, portfolio building and an exam.

Entry Requirements:

Applicants must be aged 16 or over. They must be employed in a catering setting for a minimum of 30 hours a week (including work and College).
Ideally applicants should have at least 4 GCSEs at grade C or above, including maths, English, ICT or science and a relevant Level 2. All applicants will be individually interviewed and assessed.

Career Options:

You can enter full-time employment or progress onto a higher level.
For apprentices aged 19+ fees may apply but there is an expectation that your employer will pay this contribution.
