L4 in Managing Food Safety in Catering (CIEH)

Duration : 6 daysThis advanced course expands on the subject areas of the Level 3 Award with the addition of training strategies and management control techniques. This course will give the highest level of skills to manage and supervise food safety in the workplace. An essential qualification for those wishing to train staff in the Level 2 Award.

- Relationships between food hygiene and food-borne illness and the socio-economic cost of food-borne illness and their relationship to food safety
- Characteristics and classification of bacteria
- Causes and control measures of food-borne illnesses
- Physical contamination of food and its prevention
- Food storage, temperature control and preservation
- Design and construction of food premises and equipment
- Cleaning and disinfection
- Pest control
- Personal hygiene
- Training strategies
- Legislation
- Management control techniques
Entry Requirements:
You must hold a CIEH level 3 award in supervising food safety in cateringCareer Options:

Assessment
Candidates will be required to complete a CIEH controlled asignment and sit a written examination of 2 1/2 hrs under exam conditions.
The controlled assignment comprises of two sections:
- HACCP Principles
- Application of food safety management
