L2 Award in Food Safety in Catering (CIEH)

Duration : 1 dayThis introductory course covers the basic principles of food hygiene in a simple and interesting manner and is directed at those working in kitchens or undertaking first line duties in preparing, serving or retailing food.
We are pleased to offer this course in partnership with Environmental Health departments of Tonbridge & Malling Borough Council, Tunbridge Wells Borough Council and Sevenoaks District Council. This partnership provides the latest training with those directly responsible for environmental health. All training is delivered by specialist and fully qualified trainers who have commercial experience of the food industry and environmental health.
The qualification is designed for anyone working in a catering setting where food is prepared, cooked and handled. Typical environments may include:
- Pubs, hotels and restaurants
- Hospitals
- Care homes
- Schools
- Prisons
- A firm grasp of the importance of food safety and knowledge of the systems, techniques and procedures involved
- Understanding of how to control food safety risks (personal hygiene, food storage, cooking and handling)
- Confidence and expertise to safely deliver quality food to customers.
- Refreshment of this qualification is recommended at least every three years.
Course Content:
The course places a strong emphasis on the 4 Cs: Cleaning, Cooking, Cross contamination and Chilling. Monitoring controls, corrective actions and methods of reporting are examined as part of a food safety management system. The course will cover the following main topics:
- Legislation
- Food safety hazards
- Temperature control
- Refrigeration, chilling and cold holding
- Cooking, hot holding and reheating
- Food handling
- Principles of safe food storage
- Cleaning
- Food premises and equipment
- The course concludes with a one hour multiple choice exam.
