Brakes Student Team Chef Challenge



Reece Robinson, Ladislava Searle and Megan Brooker, Level 3 Catering students at K College in Tonbridge, took part in the Brakes Student Team Chef Challenge last week at Westminster Kingsway College.


The team, mentored by Chef Steve Cole the executive Chef at the Spa Hotel Tunbridge Wells, worked very hard and achieves a lot, using exciting molecular cookery techniques including hot jelly for the starter, sous vide venison for the main – the venison is cooked in a water bath to 52C and held at this temperature for an hour, leaving the meat very tender – a smoke machine plus some ‘magic’ powder which stops ice cream melting too quickly, allowing them to do a show stopping dessert!

Daniel Davies, Course Leader NVQ Level 3 Professional Cookery, said: “All in all it was a really good day with all of our student leaving the event with big smiles. Well done!”


While they didn’t win the competition, they did a great job and got excellent feedback from all the judges. Here’s a video of all the photos from the day. Makes you hungry, doesn’t it?!
